WE’RE MAKING: ADVENTURE BREAD
Every Sunday, I whip up a batch of this hearty, nutrient-dense bread that’s perfect for the week ahead. It’s become a family tradition, with the kids jumping in to help—whether it’s stirring the seeds or sneaking bites of the dough. Packed with fiber, healthy fats, and a satisfying crunch, this loaf keeps us fueled for whatever adventures the week throws our way. Perfect for breakfast, snacks, or even paired with soups as the weather cools down. This recipe is by Josey Baker.
INGREDIENTS
DRY
2 1/4 cups (235g) rolled oats
1 cup (160g) hulled sunflower seeds
1/2 cup (65g) hulled pumpkin seeds
3/4 cup (90g) toasted almonds, coarsely chopped
3/4 cup (120g) flax seeds
1/3 cup (20g) psyllium seed husks
3 tablespoons (25g) chia seeds
2 teaspoons (12g) fine sea salt
WET
2 tablespoons (40g) maple syrup
1/4 cup (55g) olive oil
2 1/2 cups (600g) water
DIRECTIONS
Preheat your oven to 350ºF. Spread the sunflower and pumpkin seeds on a baking sheet and toast them for about 15 minutes, stirring halfway through, until they just start to brown. Keep an eye on them as they can toast faster.
In a big bowl, combine all the dry ingredients—rolled oats, sunflower seeds, pumpkin seeds, almonds, flax seeds, psyllium seed husks, chia seeds, and sea salt.
Pour the maple syrup, olive oil, and water into the dry mix. Stir everything together until the mixture becomes well combined. You can use a spoon, but honestly, getting in there with your hands to "mush" it all up is the fun part!
Oil a loaf pan, then transfer the dough into the pan. Smooth out the top. Cover and refrigerate for at least a few hours (or up to a day) to allow the ingredients to soak and bind together.
Preheat your oven to 400ºF. Let the bread come to room temperature, then bake for about an hour. Once baked, gently remove the loaf from the pan and let it cool on a wire rack for at least two hours—trust me, this wait is worth it! This bread is dense and needs the cooling time to reach its perfect texture.
Slice it thin (around 1/2-inch, 12mm), toast it up, and slather it with whatever spread your heart desires. No toaster? No problem. It’s delicious on the go, perfect for your next adventure, even without the toast!
